Bay Leaf-Tejpat

BAY LEAFTEJPAT

It’s also known as Indian Bay Leaf. These leaves add a cinnamon-like taste to dishes. They were used in the Imperial courts in Delhi and Agra. The ancient Romans used them to make perfume.


Black Salt-Kala Namak

BLACK SALTKALA NAMAK

Salty, violet-coloured and with a hint of sulphur – Black Salt is often added to chutneys and other snacks for its distinctive taste. It also has a unique sulphur smell. In Ayurvedic medicine it’s used as a cooling spice and a digestive aid.


Cardamom - El Haria Elaichi

CARDAMOMELE HARIA, ELAICHI

This spice is often used in traditional Indian sweets for its warm, almost mint-like taste with just a hint of lemon. Cardamom seeds were used by the ancient Egyptians to clean their teeth and the Greeks and Romans used it as perfume.


Carom Seeds-Ajwain

CAROM SEEDSAJWAIN

They look like cumin seeds, only smaller and taste like a stronger version of thyme. Carom seeds are used to flavour vegetable dishes and pickles. Prized for their distinctive taste and preservative qualities, ajwain is also used to aid digestion.


Cinnamon-Dalchini

CINNAMONDALCHINI

Cinnamon was so highly prized at one point that it was thought a suitable gift for monarchs. It’s sweet and warm tasting and cinnamon bark can be eaten directly. Curries, masala chai, vegetable dishes and of course desserts are enhanced by cinnamon.


Cloves-Laung

Did you know that a clove tree was an evergreen? Dried cloves are one of the ingredients of masala chai and part of the mix for garam masala. Their spicy taste is strong, so they are used sparingly in cooking. Healers have used cloves for centuries for digestive problems.


Coriander-Dhania

The coriander seed is an important ingredient in curries. Dhana dal is a snack food made from roasted coriander seeds. Coriander has a distinctive taste, is high in calcium and in North America the leaves are called cilantro – the Spanish word for the plant.


Cumin-Jeera

CUMINJEERA

As a spice, cumin is second only to black pepper in popularity. It’s sometimes confused with caraway, but cumin has a lighter colour and a hotter, more aromatic flavour. Cumin is part of the parsley family and is well-known as an appetite stimulant.


Fennel Aniseed-Saunf

FENNEL/ANISEED SAUNF

Did you know that India is the largest producer of fennel? Roasted fennel seeds –not to be confused with anise – are used to freshen breath and as a digestive. Fennel is highly aromatic and flavourful and is sometimes used to flavour natural toothpaste.


Fenugreek-Methi

FENUGREEKMETHI

Used in the commercial production of mango chutneys, fenugreek or methi has a burnt sugar taste. It’s also used extensively in curry dishes. India produces the most fenugreek in the world. India also has a very low rate of arthritis, which fenugreek is reputed to help.


Nigella-Kalonji

NIGELLAKALONJI

Nigella, or sometimes called ‘onion seed’ looks a bit like sesame seeds. Peppery and a bit nut-like, these tiny seeds are added to naan, curry, stews and dal. Nigella or kalonji has been used as an herbal remedy for over 2,500 years.


Nutmeg-Jaiphal

NUTMEGJAIPHAL

Slightly sweet, it’s used most often in desserts, some savoury dishes and just a pinch or two in garam masala. Nutmeg and mace come from the same tree and at one time both were highly prized and costly. A nutmeg tree takes 20 years to become fully producing.


Tamarind-Imli

TAMARINDIMLI

This fruit is often used in place of lime juice for the sour quality it can add to a dish. The taste is more of a sweet and sour combination and the tamarind is loaded with B vitamins and odd for a fruit – calcium. Tamarind or imli is used in the production of Worcestershire sauce.

    Bringing traditional tastes from their kitchen to yours

    Beginning with

    a love for food

    The KFI family story began with a love of traditional food. As a young bride of 22 and a recent immigrant to Canada, Kiran Kataria learned the basics of Indian and Italian cooking. She was raised on gourmet Indian food and knew how authentic Indian food should taste. Kiran was passionate about cooking and started experimenting with spice combinations like Basil and Tulsi – a well known Indian herb.

    Her children’s friends who were used to hamburgers and pasta loved her Indian cuisine. Kiran’s passion for cooking grew as she continued to run her own software business. She valued the tradition of taking care of the family. Kiran learned to create her dishes faster and still delicious.

    Understanding

    the need

    It was just after Kiran had finished making a small batch of Tamarind Date chutney sauce when Ranbir, her husband, suggested storing the chutney in an empty ketchup bottle. Squeezable for easy use and not glass – it was perfect. It didn’t take long for Kiran’s entrepreneurial spirit to take over from there. She and Ranbir began perfecting their first recipe, working with label designers and getting ready to share their first product. While running a software business full-time and now building a new food company from scratch, preparing daily meals for the family that were quick and tasty became more of a challenge.

    Rishi, one of her sons became interested in his mom’s food business hobby and realized there was a unique opportunity available. No one was making Indian sauces in Canada. All the major brands were being imported and were bland – nothing like mom’s cooking. Rishi recognized a need. Second generation Indo-Canadians loved traditional food but were unable to make it. In 2007, KFI Inc. was created and Rishi left his full-time job at a major financial institution to pursue the vision alongside Kiran.

    Truly a

    family business

    Ranbir and her other son Raman were ready when Kiran & Rishi launched their first two products – Tamarind & Date Chutney Sauce in Mild and Hot & Spicy flavours. They hit the streets after working their full-time jobs to deliver products to stores. On weekends Raman and Rishi would provide sampling sessions at local grocery stores to raise awareness. Kiran and Rishi were persuasively successful in getting Loblaw, Highland Farms and other stores to stock KFI products.

    Creating new

    traditions for families

    By 2008, KFI developed a line of chutney sauces in 6 different flavours, including 2 flavours unique to KFI – Achari Mango and Coriander Cilantro. Reminiscent of the true flavours of India, the new products were an instant success. In 2010, KFI expanded into cooking sauces and launched 5 flavours that had been a trade secret in the restaurant business. These were the ‘mother’ sauces that can be used to create over 20 different traditional-style dishes! Kiran and head taster Rishi make sure they have the exact taste and precise profile just right for each product.
